Fabulous FETA-Stuffed WHITING

THE RECIPE

Whiting is a small member of the cod family and very similar in flavour but is more economical and sustainable to buy than cod.


INGREDIENTS:

8 Whiting fillets, skinned (or unskinned if preferred)
300g Courgettes, sliced                    
150g baby Tomatoes
4 tbsp Olive oil
8 flat Mushrooms
1 tbsp Capers, rinsed and drained
2 tbsp Mint, chopped
2 tbsp Oregano, chopped
25g parma Ham, finely chopped
2 Garlic cloves, finely chopped
4 spring onions, finely chopped
200g Feta cheese
Salt and black pepper


Serves 4

METHOD:

Put the mint, oregano, Parma ham, garlic and spring onions in a bowl. Crumble in the feta cheese, season with plenty of black pepper and mix together well.

Put the fish fillets on a clean work surface and press the feta mixture down the centres. roll up loosely and secure with wooden cocktail sticks.

Preheat oven to 190°C/Gas Mark 5. Scatter the courgettes into a shallow, ovenproof dish and drizzle with half the olive oil. Place in the preheated oven for 15 minutes. Remove dish from the oven, add the whiting fillets, place the mushrooms, tomatoes and capers around the fish and season lightly with salt and black pepper and drizzle with the remaining olive oil. Return to the oven for a further 25 minutes or until the fish is cooked through.

TO SERVE:

Serve with some crusty bread and Enjoy......
