CHOCOLATE and HAZELNUT Brownies (V)

This is a really quick and simple recipe. You can use plain chocolate, why not include a bit of dark chocolate or use white chocolate and replace the nuts with any you desire, walnuts, pistachio nuts, use your imagination!


Ingredients:

225g Plain chocolate
75g Chopped Hazelnuts
115g Butter and a little extra for greasing
115g soft brown sugar
115g Self-raising flour
2 Eggs


Method:

Preheat oven to 180C/Gas Mark 4. Lightly grease a baking tin (approx 20cm/8 inch square).
Coarsley chop 175g of the chocolate. Place the remaining chocolate and the butter in a heatproof bowl and set over a saucepan of gently simmering water, stir until melted. Allow to cool slightly.

Place the eggs and sugar in a large bowl and whisk together, then beat in the cooled chocolate mixture until combined. Fold in the flour, chopped chocolate and hazelnuts.

Spoon the mixture into the baking tin and smooth out the surface.

Bake in the preheated oven for about half an hour, or until just set and still a little soft in the centre.

Remove from the oven and allow to cool in the baking tin, then cut into rectangles or squares, whatever you prefer.

Arrange on a plate and serve.
