THE RECIPE
This is a perfect starter or light lunch for serving when your time is short, this is healthy and really delicious.
INGREDIENTS:
Meatballs:
1 tbsp sunflower oil
250g minced turkey
250g minced pork
1 garlic clove (finely chopped)
1 red chilli (de-seeded and finely chopped)
2 tsps fresh ginger (grated)
1 tsp Chinese five spice powder
1 egg (beaten)
Salt and Black Pepper
To Serve:
Hoisin sauce
5 spring onions (scallions), julienned
1 cucumber, de-seeded and julienned
2 baby gem lettuces (separated into leaves)
METHOD:
For the meatballs, combine all of the meatball ingredients, apart from the oil, together in a large bowl. Shape the mixture into small walnut-sized balls. Heat the sunflower oil in a large frying pan over a medium heat and fry the meatballs for about 4-5 minutes, turning regularly, or until golden-brown all over.
TO SERVE:
Lay out a lettuce cup and place a meatball in the centre. Top with cucumber and spring onion and spoon on a little hoisin sauce. Roll up and enjoy!!
