I have always enjoyed a banoffee pie, this is a take on that using the same ingredients, but this is much easier to put together and just as impressive.
INGREDIENTS:
6 Plain digestive biscuits
25g Butter, melted
2 Ripe bananas
1 tbsp Lemon juice
150ml Double cream
150ml Custard
For the caramel
100g Butter
100g Brown soft sugar
1 Can of Condensed Milk
Grated chocolate to decorate
Serves 4
METHOD:
Put the digestive biscuits in a strong bag and bash them up with a rolling pin until you are left with crumbs, mix these with the melted butter.
For the caramel, melt the butter and sugar into a non-stick saucepan over a low heat, stirring all the time until the sugar has dissolved. Add the condensed milk and bring to a rapid boil for about a minute, stirring all the time for a thick golden caramel.
Slice the bananas and mix with the lemon juice and caramel.
Whip the cream until it holds its shape and then fold in the custard.
TO SERVE:
Spoon one tablespoon of the biscuit crumbs into the base of each of the four jars or glasses, spoon over half the banoffee (bananas, lemon juice and caramel) mix and then half the custard mix between the four jars. Repeat these layers, reserving some biscuit crumbs for the top. Sprinkle the top of each fool with the remaining biscuit crumbs and grated chocolate. Chill until ready to serve. Enjoy......
